• 1medium Braeburn apple, quartered, cut into 1⁄2-inch bias
  • 1medium Granny Smith apple, quartered, cut into 1⁄2-inch bias
  • 2middle celery stalks with leaves, split lengthwise, cut into 1⁄2 “ bias 1⁄4 cup parsley, chopped
  • 4Tbspsunflower seeds
  • 2Tbsplemon juice
  • 2Tbspextra virgin olive oil
  • 1Tbspcider vinegar
  • 1TbspDijon mustard
  • 1pinchsea salt
  • 1pinchblack pepper, fresh ground
  1. Combine all ingredients in a mixing bowl. Mix well.
  2. Divide among plates and serve.
