  • 2cupsshredded carrots (about 4 medium)
  • 1cuppeeled and shredded celeriac
  • 1/4cupraisins
  • 1/4cupwalnuts
  • 2Tbspcanola oil
  • 2Tbsplemon juice
  • 1Tbsphoney
  • 1small shallot, minced
  • 1/2tspsalt
  • 1/4tspblack pepper
  1. Whisk oil, lemon juice, honey, shallot, salt, and pepper in a large bowl.
  2. Add carrots, celeriac, raisins, and walnuts. Toss to combine.
