• 2lbparsnips, peeled and quartered
  • 1/3cupolive oil
  • 1/2cupmaple syrup
  • salt and pepper to taste
  1. Preheat oven to 400° F.
  2. Line a baking dish with non-stick baking paper, or coat lightly in oil.
  3. Toss parsnips, salt, pepper, and olive oil in the pan until parsnips are well-coated.
  4. Roast for 30 minutes, remove from oven, and drizzle syrup over parsnips.
  5. Return to oven and roast another 15-20 minutes until cooked through and golden.
