A member of the celery family, celeriac is high in dietary fiber and protein as well as many crucial vitamins and minerals. Celeriac has high contents of vitamins C and K, and various B vitamins such as, thiamine (B1), riboflavin (B2), niacin (B3), pantothenic acid (B5), and vitamin B6. It is rich with calcium, iron, magnesium, manganese, phosphorus, potassium, sodium, and zinc.
Carrot Celeriac Slaw
- 2cupsshredded carrots (about 4 medium)
- 1cuppeeled and shredded celeriac
- 2Tbspcanola oil
- 2Tbsplemon juice
- 1small shallot, minced
- 1/4tspblack pepper
- Whisk oil, lemon juice, honey, shallot, salt, and pepper in a large bowl.
- Add carrots, celeriac, raisins, and walnuts. Toss to combine.
