Cabbage is an excellent source of vitamin K, vitamin C and vitamin B6. It is also a very good source of manganese, dietary fiber, potassium, vitamin B1, folate and copper. Additionally, cabbage is a good source of choline, phosphorus, vitamin B2, magnesium, calcium, selenium, iron, pantothenic acid, protein and niacin.

Asian Coleslaw

  • 4cupscabbage, shredded
  • 2carrots, shredded
  • 1/2red onion, thinly sliced
  • 3green onions, chopped
  • 1garlic clove, minced
  • 1Tbsplemon juice
  • 1 1/2Tbspsoy sauce or tamari
  • 1Tbsprice vinegar
  • 2tspmaple syrup
  • 1tsphot chili sauce
  • 2Tbspsesame oil
  • 2Tbspsesame seeds
  1. In a large bowl, combine cabbage, carrots, red onion, and green onions.
  2. In a small bowl, combine remaining ingredients and mix well.
  3. Pour the dressing over the vegetables and mix until well combined.
  4. Refrigerate for a few hours or longer, and serve.
